Barley is grown in northern Italy. The barley on the market today is always pearl barley, in which the husked grain has been polished. It is made into soups in Valle d’Aosta, Alto Adige and Friuli. These regions have many dishes originating in Germany and Austria, where barley is more popular than in Italy.
A tiny pasta shape, made from wheat flour and resembling little grains, is known either as orzo, or as risoni (‘big rice’).
Barley can be roasted and ground to make a caffeine-free alternative to coffee, often called simply ‘orzo’. All through the war my mother, who adored coffee, had to make do with this awful drink, to which some ground dandelion root was added for bitterness.
